Ingredients
1 cup chopped scallions
30 oz fresh baby spinach (3-10oz packages)
1 tbsp cornstarch (or low carb thickener)
0.5 cup half & half
3 oz cream cheese
0.25 cup sour cream
0.5 cup fresh chives , chopped
0.5 tsp salt (optional)
0.25 tsp black pepper
0.12 tsp hot red pepper flakes (to taste)


Directions
1 Coat a medium saucepan with cooking spray and heat over medium. Add scallions and cook until tender, approximately 5 minutes.
2 Add spinach and cook, stirring occasionally, until spinach is just wilted, about 3 minutes.
3 In small bowl, whisk cornstarch and half and half until cornstarch dissolves.
4 Move spinach to sides of pan and pour cornstarch mixture in center. Cover and stir occasionally until thickened, about 2 to 3 minutes.
5 Reduce heat to low and stir in cream cheese, sour cream, chives, salt, black pepper, and red pepper flakes. Cook until creamy and heated through, about 2 minute.
