Ingredients
2.5 oz apricot nectar juice drink, canned
0.33 cup Vinegar, red wine (or cider vinegar)
0.33 cup canola oil
2 tsp dijon mustard
0.25 tsp salt
0.12 tsp black pepper
2 tbsp sugar
0.5 cup chopped walnuts
12 cup salad greens , torn
3 medium pears , sliced
0.5 cup Cranberries, dried
0.75 cup Cheese, blue, crumbled


Directions
1 For dressing, whisk together the first six ingredients in a bowl and set aside.
2 In a heavy skillet, melt sugar over medium heat, stirring constantly. Add walnuts, stir to coat. Remove from heat.
3 In a large salad bowl, combine greens, pears, and cranberries. Drizzle with dressing. Add nuts and blue cheese; toss.
