1 Preheat oven to 350 degrees F. 2 Coat a 9 x 5 x 3 inch loaf pan with nonstick cooking spray. Use a large bowl and mix the flour, baking powder, baking soda, and sugar in a bowl. 3 In a separate, small bowl, mix the oil, orange juice, egg, orange rind, and almond extract. 4 Add the orange juice mixture to the dry ingredients, stirring until the dry ingredients are moistened. 5 Fold in cranberries. Pour batter into the prepared pan. Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean. Serve cool.
