Servings
Ingredients
1.5 cup fresh cranberries (or frozen thawed)
1 cup sugar , divided
1 tsp grated orange peel
1.5 cup white all purpose flour
2 tsp low sodium baking powder
0.5 tsp salt
1 eggs
0.25 cup orange juice
0.25 cup fat free milk
3 tbsp margarine , softened
0.25 cup chopped pecans (up to 1/2 cup)


Directions
1 Preheat oven to 400 degrees.
2 Lay cranberries in a cooking spray coated 8 inch square baking pan and top with 1/2 cup sugar and the orange rind.
3 Combine the rest of the sugar, flour, baking powder, salt, egg, orange juice, skim milk, margarine, and pecans.
4 Spoon mixture overtop of cranberries, spreading evenly.
5 Bake batter 25 to 30 minutes or until a toothpick comes out clean. Flip out of pan and slice.
