1.25 cup Flour, pastry, whole wheat, stone ground
1 cup oat bran (or 1/2 c oat bran and 1/2 c flax meal)
0.33 cup sugar
1 tbsp low sodium baking powder
0.5 tsp ground nutmeg
0.12 tsp salt
1.25 cup unsweetened applesauce
0.5 cup liquid egg substitute (or 2 eggs plus 1 egg white lightly beaten)
0.25 cup canola oil
1.5 tsp vanilla extract
0.5 cup Cranberries, sweetened, dried, Craisins (or cherries or blueberries)
0.5 cup chopped walnuts , chopped ( or pecans, optional)


Directions
1 Preheat the oven to 350 degrees.
2 Mix the flour, oat bran, sugar, baking powder, nutmeg, and salt in a large bowl.
3 Mix the applesauce, egg substitute or eggs, oil, and vanilla extract in a medium sized bowl.
4 Add the applesauce mixture to the flour mixture and stir to mix well.
5 Fold in the berries and, if desired, the nuts.
6 Spray the bottom and sides of an 8 x 4 inch pan with nonstick cooking spray.
7 Spread the batter in the pan and bake for about 50 minutes until a toothpick inserted into the center of the loaf comes out clean.
8 Let the bread sit for 15 minutes after removing it from the oven.
9 Turn the loaf upside down onto a wire rack. Then turn right side up. Allow to cool to room temperature before slicing.
Additional Information
Mashed, very ripe bananas can be substituted for the applesauce.
