Ingredients
0.75 cup dungeoness crab meat , drained
0.25 medium red bell peppers , finely chopped
2 tbsp chopped scallions , finely
3 tbsp mayonnaise
1 pinch oregano leaves
1 pinch white pepper
14 fresh artichokes , remove leaves, bottoms only (or 2 15-ounce cans)


Directions
1 Toss the crab meat, pepper, and scallions to mix in a small bowl. Stir in the mayonnaise, oregano, and white pepper.
2 Cover the mixture and refrigerate for at least 1 hour until well chilled.
3 Fill each artichoke bottom with a tablespoon of the crab mixture.
4 Serve immediately.
