6 oz parmesan couscous mix
1.25 cup low sodium vegetable broth
1 lb extra lean ground beef (5% fat)
1 small onions , chopped
1 medium zucchini , sliced
1 medium garlic cloves , minced
1 cup fresh cherry tomatoes , quartered
1 cup fresh asparagus , trimmed and chopped
0.25 cup fresh lemon juice
0.25 tsp kosher salt , to taste (optional)
0.25 tsp lemon pepper seasoning
0.25 tsp hot red pepper flakes
2 tbsp chopped parsley
2 tbsp fresh basil , chopped


Directions
1 In small saucepan, prepare couscous in vegetable broth according to package directions.
2 In large, nonstick skillet over medium-high heat, brown beef and onions. Drain.
3 Add zucchini, squash, garlic, tomatoes, asparagus, lemon juice, kosher salt, lemon pepper, and red pepper. Sauté 5 - 7 minutes until tender.
4 Stir in couscous, top with parsley and basil.
