1 In large serving bowl, add couscous, tomatoes, scallions, cucumber, and parsley and gently mix. 2 In small bowl, combine lemon juice, olive oil, and cumin. Season to taste with salt and pepper and stir. 3 Spoon dressing on top of the couscous and gently combine. Serve immediately or cover and chill.
Additional Information
To rehydrate couscous, pour 4 cups of boiling water over the couscous. Let soak for 5 minutes.
