Ingredients
0.5 cup couscous
0.12 oz Bouillon, chicken, sodium free, instant packet , 1 teaspoon
1 cup cold water , boiling
1 medium tomatoes , seeded and finely chopped
1 small cucumber, peeled , peeled and finely chopped
0.25 cup balsamic vinaigrette , sugar free
10 oz fresh baby spinach , stems removed
3 oz reduced fat feta crumbles


Directions
1 Combine the couscous and bouillon granules in a large bowl. Stir in the water. Cover and set aside for 5 minutes.
2 Add the tomato, cucumber and dressing and toss until blended. Cover and refrigerate until ready to serve.
3 Right before serving, add 3 cups of spinach and the cheese to the couscous and toss.
4 Line a serving platter with the remaining spinach leaves and spoon the couscous mixture over the top.
