1 lb extra lean ground beef (5% fat)
0.5 small onions , chopped
2 medium garlic cloves , minced
0.5 tsp greek seasoning
2 tbsp fresh lemon juice
14 oz fat free unsalted beef broth
8 oz couscous
4 cup salad greens
1 cup fresh cherry tomatoes , sliced
4 fresh green onions , chopped
0.5 large yellow bell pepppers
2 radishes , diced
1 small cucumber, peeled , diced
3 tbsp chopped parsley , chopped
2 tbsp fresh basil , chopped
1 tbsp balsamic vinegar (optional)
1 tbsp olive oil (optional)
1 tbsp crumbled feta cheese (optional)


Directions
1 Brown the beef with the onion and garlic in a large, nonstick skillet over medium high heat for about 5 minutes. Drain.
2 Add the Greek seasoning and lemon juice, stirring well.
3 In a separate pot, bring the beef broth to a boil. Add the couscous and cook according to the package directions.
4 Combine the beef and the couscous. Stir well.
5 Arrange lettuce on a platter and top with the beef, cherry tomatoes, green onions, pepper, radishes, cucumber, parsley, and basil. If desired, drizzle with balsamic vinegar and olive oil and top with feta cheese.
