Ingredients
1 cup Couscous, cooked
1 cup Peas, chickpea, canned , rinsed and drained
0.5 cup chopped parsley (flat leaf)
0.5 cup fresh cilantro , chopped (1/2 small bunch)
1 tbsp ground cumin
0.5 medium red bell peppers , chopped
0.5 cup medium green bell peppers , chopped
1 cup dried mixed fruit morsels , chopped
2 tbsp pistachios
1 oz pine nuts , 2 tablespoons, toasted


Directions
1 Cook the couscous according to the package directions and make sure it is dry before you use it.
2 Put the couscous in a large serving bowl and combine well with the chickpeas, cilantro, parsley, cumin, peppers, dried fruit, pistachios, and pine nuts.
3 To make the dressing, put the oil and lemon juice in a screw top jar and shake well. Season with the pepper, and then pour over the couscous.
Additional Information
This couscous can go great by itself, or as a side to larger meals.
