1 Cook the couscous according to the package directions and make sure it is dry before you use it. 2 Put the couscous in a large serving bowl and combine well with the chickpeas, cilantro, parsley, cumin, peppers, dried fruit, pistachios, and pine nuts. 3 To make the dressing, put the oil and lemon juice in a screw top jar and shake well. Season with the pepper, and then pour over the couscous.
