Servings
Ingredients
1 lb Beef, top round roast, extra lean, raw
1 pinch salt (optional)
1 pinch black pepper (optional)
1 tbsp olive oil
2 medium onions , chopped
1 chopped green bell peppers , seeded and chopped
1 medium garlic cloves , chopped
2 tbsp white all purpose flour
0.5 tsp Gravy, brown, dry mix (Kitchen Boquet, if available)
0.5 cup cold water
1 cup Tomatoes, stewed, canned

Directions
1 Place 6 individual pieces of cut beef in between sheets of wax paper. Season the beef with salt and pepper, if you wish, and then pound with a mallet.
2 Sauté the onion, green pepper, and garlic for 5 minutes in a large skillet with oil.
3 Brown the beef quickly on both sides. Stir in flour and kitchen bouquet in order to make gravy to your liking. Add water and continue to stir as the gravy thickens.
4 Mix in stewed tomatoes, cover, and cook until beef is cooked to your liking, approximately 30 minutes.
