Ingredients
1 lb Cornish Game Hen, whole, with o skin, raw , cut in half lengthwise
3 medium garlic cloves , minced, divided
0.5 tsp ground ginger
1 pinch black pepper
2 tbsp fresh chopped red onion , minced
2 tbsp fresh peppermint , minced
2 tbsp fresh cilantro , minced
1 whole jalapeno pepper , minced
2 tsp packed light brown sugar
2 tsp fresh lemon peel
0.5 tbsp fresh ginger root , minced
1.5 tbsp low sodium soy sauce
2 tbsp fresh lemon juice


Directions
1 Preheat grill to medium. Rinse hen, pat dry, and remove all noticeable fat.
2 In small bowl, mix 1 minced garlic clove, ginger, and pepper. Cover hen with garlic mixture.
3 Grill hen halves for about 25 to 30 minutes or until the meat in the center is no longer pink. Turn hen halves every 5 minutes.
4 In blender, finely mince onion, cilantro, mint, chili pepper, brown sugar, lemon zest, 2 minced garlic cloves, ginger, soy sauce, and lemon juice.
5 Place hens on serving plates and garnish with relish.
Additional Information
To decrease the spiciness of the relish, remove the seeds and the white membranes from the jalapeño pepper.
