2 Cornish Game Hen, whole, with o skin, raw , cut in half and backbones discarded
0.25 tsp dried dill weed
0.25 tsp ground oregano
0.25 tsp black pepper
1 pinch paprika , optional
1 tbsp extra virgin olive oil
1 medium garlic cloves , minced
2 medium shallots , minced
0.5 cup Mixed Drink, sweet vermouth
1 tbsp frozen orange juice concentrate
1 tbsp chopped parsley
2 tbsp slivered almonds , blanched


Directions
1 Preheat the oven to 350 degrees Fahrenheit.
2 Sprinkle the chicken with the dill weed, oregano, pepper, and paprika on both sides.
3 Heat the oil in a nonstick skillet. Sauté the hens for 4 minutes then turn over and sauté for another 4 minutes. Place on a baking dish.
4 Sauté the garlic and shallots for 1 minute. Mix in the vermouth and orange juice. Spoon the mixture over the hens.
5 Cover the baking dish with foil and bake for approximately 20 minutes. Baste a couple of times.
6 Raise the temperature to 425 degrees Fahrenheit and bake, uncovered, for 5 minutes. Garnish with the parsley and almonds.
