Servings
Ingredients
2.5 tbsp olive oil
1 lb raw medium shrimp , peeled and deveined
2 medium garlic cloves , minced
0.5 cup fresh chopped onion
1.5 cup Corn, yellow, sweet, kernels, fresh , from 2 ears of corn
2 cup fresh cherry tomatoes
0.5 cup fresh basil , chopped
0.25 tsp salt
0.25 tsp black pepper


Directions
1 Pour 2 tablespoons oil in a frying pan and heat over medium-high heat. Cook shrimp 2 minutes per side; move to a platter.
2 Pour 1/2 tablespoons oil in pan and sauté garlic and onion 1 minute. Add in the corn and sauté 1 minute; sauté tomatoes 1 minute.
3 Mix in shrimp and cook 1 to 2 minutes. Take pan off of heat and mix in the basil, salt, and pepper.
Additional Information
Serve this warm sauté over capellini pasta or chilled over romaine lettuce.
