Ingredients
3 ears of corn , combined weight about 9 ounces
1 medium garlic cloves , crushed
0.5 cup fresh cilantro (1 small bunch)
1 Chili Peppers, green, whole , seeded and finely chopped (or red chili pepper)
1 scallions , finely chopped
1 tbsp soy sauce
0.75 cup white all purpose flour
2 eggs , lightly beaten
4 tbsp cold water
0.12 cup vegetable oil , for shallow frying
1 pinch salt and pepper , to taste
1 tbsp chili sauce , to serve


Directions
1 Begin by slicing the kernels from the cobs with a sharp knife using a downward stroke. Then, rinse the corn to remove any debris and then place it in a bowl.
2 Add the garlic, chopped cilantro, red or green chili, scallion, soy sauce, flour, eggs, and water to the corn, mix well to combine.
3 Season with salt and pepper to your taste, and then mix well again. When well combined, the mixture should be firm enough to hold its shape, but not stiff.
4 After heating the oil in a large frying pan, add spoonfuls of the corn mixture to the pan, gently spreading each one out with the back of the spoon to shape the fritters. Cook for 1 to 2 minutes on each side.
5 Drain the first batch of fritters on some paper towels and then transfer them to a foil covered dish to keep them warm while frying more fritters in the same way.
6 Serve the fritters hot with the sweet chili sauce.
