Directions
1 Season the chicken breasts with the salt and pepper. In a large skillet coated with nonstick cooking spray, heat the olive oil, brown the chicken, remove from the pan, and set aside.
2 Add the green onions, garlic, and mushrooms to the pan, and sauté until tender. Add the white wine, tomatoes, and broth, and bring to a boil, and adjust the seasonings.
3 Reduce to a simmer, and add the chicken, cover, and continue to cook for about 30 to 40 minutes, or until the chicken is tender, and serve.
