Ingredients
0.5 cup Wheat, cracked, bulgur, dry serving , packed
0.5 cup chicken broth
1 medium cucumber , seeded and chopped
1 medium tomatoes , chopped
1 medium carrots , shredded
3 fresh green onions , thinly sliced
3 tbsp fresh lime juice
0.75 tbsp chili powder
1 pinch garlic powder


Directions
1 Place bulgur in a colander and rinse under cold running water. Drain and transfer to a small bowl.
2 In a small saucepan bring the chicken broth to a boil. Stir in the bulgur, remove from the heat and let stand for 1 hour.
3 Stir in the cucumbers, tomatoes, carrots, and green onions into the bulgur.
4 In a small bowl whisk the lime juice, chili powder and garlic powder together. Pour over the bulgur mixture and stir until combined.
5 Cover and chill for 2 hours before serving. Stir before serving.
Additional Information
Top with oil and vinegar if desired.
