Ingredients
1 tbsp olive oil
0.5 cup fresh chopped onion
1 tbsp fresh ginger root
2 medium garlic cloves , chopped
1 serrano chili peppers , chopped
1.5 tbsp molasses
0.5 cup rum , dark rum
4 cup brewed coffee , hot
1 tbsp instant coffee granules
1.5 tsp ground cinnamon
1.5 tsp Cocoa Powder, unsweetened
1 tbsp margarine , softened
0.5 tsp salt
2 lb Pork, tenderloin, lean, raw
1 cooking spray


Directions
1 Pour oil in a frying pan and heat over medium high heat. Saute onion in pan 5 minutes.
2 Mix in ginger, garlic, and serrano chile and cook 2 minutes. Mix in molasses.
3 Take pan off of heat and pour in rum. Cook mixture 2 minutes.
4 Mix in brewed coffee, ground coffee, cinnamon, and cocoa. Let boil, cook 20 minutes or until reduced to 1 1/2 cups.
5 Take mixture off of heat and let cool.
6 Using a blender, puree mixture until smooth. Blend in butter and salt.
7 Preheat grill.
8 Cut off excess fat from pork. Slice pork into 8 1/2 inch wide pieces. Skewer pork onto 8 kabob sticks.
9 Lay kabobs on a cooking spray coated grill rack and cook 4 minutes per side or until preferred degree of doneness. While cooking, baste with sauce. Serve extra sauce on the side.
Additional Information
Be sure to use good coffee in the sauce; use flavored if desired.
