1 Preheat the oven to 400 degrees. Spray a muffin pan with the cooking spray. 2 Mix together the flour, sugar, baking powder, salt, and coconut in a bowl. 3 Mix together the yogurt, vegetable oil, coconut extract, egg, and egg white in a bowl. 4 Combine with the flour mixture and stir until all of the ingredients are moistened. 5 Pour into the muffin cups. 6 Bake for about 19 to 20 minutes. Take out of the oven and remove from the pan instantly.
