1 tbsp butter
0.25 cup SPLENDA® Sugar Blend for Baking
1 egg whites
2 tbsp white all purpose flour (or white whole wheat flour)
1 tbsp unsweetened cocoa powder
0.5 oz unsweetened baking chocolate , finely chopped (equal to 1-1/2 tablespoons)
1 tsp vanilla extract
1 pinch salt
1 pinch confectioners sugar (optional)
1 cooking spray


Directions
1 Preheat oven to 300°F.
2 Coat baking sheet with nonstick cooking spray.
3 In small saucepan, over medium heat, melt butter. Swirl pan until butter is lightly browned, about 1 minute.
4 Transfer butter to medium bowl. Add sugar and whisk briskly. Add egg white, flour, cocoa, unsweetened chocolate, vanilla and salt and whisk until smooth.
5 Drop batter by teaspoons, about 2 inches apart, onto prepared baking sheet.
6 Bake until set in center, 12 to 15 minutes.
7 Using spatula, immediately transfer cookies to cooling rack. (If cookies begin to stick before all are removed, return pan briefly to oven.)
8 Dust cookies with confectioner's sugar, if desired.
