1 Add onions and garlic to lightly greased Dutch oven and cook, covered, over medium low heat until wilted, 8 to 10 minutes. 2 Stir in sugar and continue cooking, uncovered, until onions are lightly browned. 3 Stir in broth and bay leaves, heat to boiling. 4 Reduce heat and simmer, covered, 30 minutes. 5 Discard bay leaves, season to taste with salt and white pepper. 6 Top each bread slice (if using) with 1 tablespoon cheese, broil 6 inches from heat source until cheese is melted. 7 Top each bowl of soup with a Bruschetta.
