Ingredients
8 medium garlic cloves , minced or pressed
1 cup white wine
1 lb large scallops , cut in half crosswise
6 cup salad greens
1 medium red bell peppers , seeded and cut crosswise into rings
2 medium oranges , peeled, seeded, and sectioned
1 tbsp fresh basil
3 tbsp olive oil
1 tsp fresh lemon juice
2 tbsp orange juice
0.25 tsp black pepper (to taste)
1 pinch salt (to taste)


Directions
1 In small saucepan, combine garlic and white wine and bring to boil. Add scallops and cook on medium high heat for about 5 minutes, stirring often, until tender and opaque.
2 With slotted spoon, remove scallops from pan and set aside in bowl.
3 Return sauce to heat. Reduce remaining garlic and wine to about 1/4 cup by simmering for about 10 minutes. Set aside to cool.
4 In small bowl, whisk orange juice, lemon juice, and olive oil.
5 Add reduced wine liquid, salt, and pepper to taste.
6 Toss 1/2 of dressing with scallops.
7 Spread greens on large platter and arrange pepper rings and orange sections artfully around edge.
8 Ladle scallops into center of serving platter and drizzle remaining dressing over salad.
9 Top with basil and serve immediately.
