Directions
1 Preheat oven to 350 degrees.
2 Coat a nonstick cookie sheet with cooking spray.
3 Split muffin in half and set aside.
4 In a small bowl, whisk together cottage cheese, sugar substitute, and ground cinnamon. Spread cottage cheese mixture over each muffin half.
5 Arrange muffins on prepared cookie sheet and bake for 5 minutes or until lightly browned. Serve immediately.
Additional Information
Cinnamon Toast can double for a breakfast dish or an after-school treat. Add a few raisins if you wish to make it more special.
