Servings
Ingredients
1 tsp canola oil
8 oz boneless skinless chicken breasts , cut into 1 inch pieces
2 tsp low sodium soy sauce
1 tsp rice vinegar
0.5 tsp toasted sesame oil
1 pinch hot red pepper flakes
0.75 cup fresh cilantro
16 oz fresh shredded cabbage , 2 cups
2 tbsp dry roasted unsalted peanuts , coarsely chopped


Directions
1 Heat cooking oil over medium high heat in a medium skillet. Add chicken. Cook and stir for 3 to 4 minutes or until chicken is no longer pink.
2 Add soy sauce, vinegar, sesame oil, and crushed red pepper. Cook and stir for 1 minute. Remove from heat and add cilantro.
3 Spoon chicken mixture over cabbage. Top with peanuts.
Additional Information
Instead of serving over cabbage, this chicken can also be served over rice.
