Ingredients
8 oz fresh baby spinach
6 tbsp extra virgin olive oil
5 oz chorizo sausage , very thinly sliced
2 tbsp sherry vinegar


Directions
1 Begin by first discarding any tough stalks from the spinach.
2 Next, pour the oil into a large frying pan and add the sausage, cooking it gently for roughly 3 minutes. When cooked, the slices should start to shrivel slightly and begin to change color.
3 Add the spinach leaves to the pan and then remove the pan from the heat.
4 Toss the spinach in the warm oil just until it starts to wilt.
5 Add the sherry vinegar and a little seasoning, if desired.
6 Toss the ingredients briefly to combine, and serve immediately while still warm.
Additional Information
As an alternative to spinach, arugula also works well with this recipe.
