Ingredients
10 Cookies, chocolate wafer (crumbs, about 1/2 cup)
8 oz fat free cream cheese
8 oz low fat cream cheese
1 cup sugar
1.5 cup fat free cottage cheese , pureed in food processor until smooth
1 eggs
1 tsp vanilla extract
0.25 cup white all purpose flour
0.25 cup unsweetened cocoa powder
0.33 cup brandy
2 tsp almond extract (or to taste)


Directions
1 Preheat the oven to 325 degrees F.
2 Spread the chocolate crumbs on the bottom of a 9-inch spring form pan, and set aside.
3 Use a large mixing bowl and beat together the cream cheese, sugar, cottage cheese, egg, and vanilla.
4 In a small bowl, combine the flour and cocoa, and gradually add to the cream cheese mixture. Mix in the liqueur and extract.
5 Pour the batter into the pan, and bake for 1 hour, or until set.
6 Remove from the oven, cool to room temperature, and refrigerate until well chilled.
7 Remove the sides of the pan, and serve.
Additional Information
Instead of brandy and almond extract, you may use amaretto. For a totally different flavor, try other liqueurs! To help prevent from cracking, run a knife around the edge of the pan after removing from the oven.
