Ingredients
12 oz boneless skinless chicken breasts , fat trimmed, cut diagonally into thin slices
1 tbsp vegetable oil
1 cup fresh broccoli florets
8 oz fresh cauliflower florets , 1 cup
0.5 lb fresh mushroom slices
4 fresh green onions , cut into 1-inch pieces
2 tbsp low sodium soy sauce
3 tbsp cooking sherry
1 tsp fresh ginger root , grated
1 tsp Starch, arrowroot , dissolved in 2 tablespoons of water
1 tsp sesame oil
0.25 cup dry roasted unsalted peanuts


Directions
1 Heat the oil in a nonstick skillet. Stir fry the chicken for about 3 to 4 minutes.
2 Transfer onto a plate using a slotted spoon.
3 Stir fry the broccoli and cauliflower for 2 minutes.
4 Mix in the mushrooms, green onions, soy sauce, sherry, and ginger root. Stir fry for an additional 2 minutes.
5 Stir in the arrowroot, sesame oil, peanuts, and chicken. Cook to heat thoroughly.
Additional Information
Serve on a bed of orange rice.
