Directions
1 NOTE: This recipe require 3-5 hours in refrigerator.
2 In large saucepan, add sugar, water, lemon juice, and gelatin. Set aside for 2 to 3 minutes.
3 Place saucepan on stovetop. Simmer mixture over medium heat, stirring continually until sugar and gelatin dissolve.
4 Remove from heat. Cool to room temperature. Cover and refrigerate until mixture is the consistency of unbeaten egg whites.
5 In food processor or blender, puree 2 cups raspberries until smooth, strain to remove seeds.
6 In large mixing bowl, combine whipped topping and milk. With electric hand mixer, beat at high speed until soft peaks form, about 4 minutes.
7 Remove gelatin from refrigerator. Fold raspberry puree into gelatin mixture, then fold in whipped topping.
8 Transfer to serving dish. Chill in refrigerator 2 to 4 hours. Top with remaining fresh raspberries and mint.
