1 Remove and dispose of tomatillo husks. Finely dice tomatillos. 2 Mix tomatillos, avocado, radish, cilantro, lime juice, salt, and red pepper in a bowl and set aside. 3 Heat a cooking spray coated frying pan over medium high heat. 4 Season chicken with poultry seasoning and cook in pan for 3 minutes. Flip chicken, lower heat, and cook another 5 minutes or until fully cooked. 5 Serve chicken with tomatillo/avocado mixture.
Additional Information
Fix the salsa first so the flavors have time to develop. Serve with baked tortilla chips, reduced-fat sour cream, and frozen margaritas for a quick, festive dinner.
