Ingredients
4 oz Tomatillo, fresh, medium (3 tomatillos)
0.75 cup Avocado, halves , peeled and chopped
3 oz Radishes, fresh , 1/3 cup, sliced
0.25 cup fresh cilantro , chopped
2 tbsp fresh lime juice
0.5 tsp salt
0.25 tsp hot red pepper flakes
1 cooking spray
4 boneless skinless chicken breasts
1.5 tsp poultry seasoning


Directions
1 Remove and dispose of tomatillo husks. Finely dice tomatillos.
2 Mix tomatillos, avocado, radish, cilantro, lime juice, salt, and red pepper in a bowl and set aside.
3 Heat a cooking spray coated frying pan over medium high heat.
4 Season chicken with poultry seasoning and cook in pan for 3 minutes. Flip chicken, lower heat, and cook another 5 minutes or until fully cooked.
5 Serve chicken with tomatillo/avocado mixture.
Additional Information
Fix the salsa first so the flavors have time to develop. Serve with baked tortilla chips, reduced-fat sour cream, and frozen margaritas for a quick, festive dinner.
