1 Coat the rack of a broiler pan with cooking spray. Preheat broiler. 2 Combine marmalade, scallions, mustard, lemon juice, and red pepper. 3 Season chicken with salt. Arrange chicken on broiler rack and coat with half the marmalade mixture. 4 Broil 4 minutes, per side, brushing with the rest of the marmalade while cooking.

This marmalade glaze also goes great with pork chops or salmon.
