Servings
Ingredients
2 tsp brown sugar
0.5 tsp salt
0.5 tsp ground cumin
0.25 tsp garlic powder
4 boneless skinless chicken breasts
2 tsp vegetable oil
2 Plums, fresh, medium, FDA , chopped
2 tbsp fresh cilantro , chopped (or 1 tsp dried)
2 tbsp fresh chopped red onion
2 tsp cider vinegar
0.25 tsp hot pepper sauce
0.12 tsp salt


Directions
1 Mix together brown sugar, salt, cumin, and garlic powder. Massage spices onto surface of chicken breasts.
2 Pour oil into a frying pan and heat over medium heat. Cook chicken in pan 6 minutes per side, chicken should be cook through when finished.
3 Meanwhile, mix together plums, cilantro, onion, vinegar, hot sauce, and salt in a bowl.
4 When ready to serve, spoon salsa over chicken or serve on the side.
Additional Information
Peaches, nectarines, or pineapple can be used instead of plums, or use a combination.
