Ingredients
1 tsp olive oil
0.25 cup fresh chopped celery
1 cup fresh mushroom slices
2 cup cooked chicken breast, diced
0.25 cup pimentos , chopped
0.25 cup slivered almonds , blanched
2 tbsp cooking sherry , dry
1 pinch black pepper
4 piece sliced whole wheat bread , toasted and cut into triangles


Directions
1 Pour the oil into a nonstick skillet. Saute the celery and mushrooms.
2 Mix in the chicken and pimientos. Cook until heated through.
3 Mix in the almonds, sherry, and pepper.
4 Place the chicken mixture on top of the bread slices and serve.
