1 cooking spray
16 oz arugula , 2 cups, torn
4 boneless skinless chicken breasts
2 tsp fresh sage , chopped
2 tsp fresh rosemary , chopped
1 fresh plum tomatoes , chopped
0.5 tsp salt , divided
0.5 tsp black pepper , divided
4 tsp olive oil
4 pitted calamata olives (optional)


Directions
1 Preheat oven to 450 degrees.
2 Cut each piece of parchment into a heart shaped piece.
3 Coat each parchment piece with cooking spray, being sure to leave a 2 inch border around the edge.
4 Arrange 1/2 cup arugula on one side of parchment paper heart so that it touches middle, but not ungreased border.
5 Lay chicken breast on top and season with 1/2 teaspoon of sage and 1/2 teaspoon rosemary. Place 1/4 cup tomato on top. Top with 1/8 teaspoon salt and 1/8 teaspoon pepper, oil, and olives, if using.
6 Fold parchment and secure edges. Continue on with the rest of the chicken and ingredients.
7 Move packages to a baking sheet and bake 20 minutes.
8 When ready to serve, place each package on a plate and let guests open themselves.
Additional Information
This also works great with salmon. This method keeps the meat very moist and flavorful.
