1 Heat a medium saucepot over medium high heat. Spray a skillet with the cooking spray and add in the celery, squash, mushrooms, thyme, and pepper medley. 2 Cook for 3 minutes then pour in the soup. Bring to a boil, decrease the heat, cover, and let simmer for 30 minutes. Stir sporadically. 3 Mix in the rest of the ingredients and cook for another 5 minutes.
