Ingredients
1 tbsp canola oil
1 lb boneless skinless chicken breasts , cut into 1" strips
1 cup fresh chopped onion
1 medium red bell peppers , thinly sliced
1.5 tsp minced garlic
0.25 cup heavy whipping cream
1 tbsp paprika
1 tbsp tomato paste
1 tsp caraway seeds
0.5 tsp salt
0.25 tsp black pepper
14.5 oz canned unsalted diced tomatoes , undrained


Directions
1 In large skillet, heat oil over medium.
2 Add chicken and cook until brown, about 5 minutes, stirring frequently. Remove chicken, cover, and set aside.
3 Add onion, pepper, and garlic to skillet. Cook over medium high heat until onions and peppers are soft, about 3-4 minutes.
4 Add chicken back to skillet.
5 Add cream, paprika, tomato paste, caraway, salt, pepper, and canned tomatoes. Stir well to combine. Cover and simmer for 5 minutes until sauce thickens.
Additional Information
Serve over whole wheat egg noodles.
