Ingredients
12 oz boneless skinless chicken breasts , cut into 1/2 inch cubes
1 cup fresh asparagus , cut into 1 inch pieces
1.25 cup snow peas , halved
1 cup Corn, baby, gold & white, frozen , thawed
1 cup fresh bean sprouts
1 cup mandarin oranges, canned, with juice, drained
1.5 cup chopped green bell peppers (or red peppers)
0.75 cup sliced water chestnuts
2 fresh green onions , chopped
2 tbsp frozen orange juice concentrate , thawed
1 tbsp rice vinegar
1 tbsp low sodium soy sauce
2 oz honey
2 tsp vegetable oil
1 tsp sesame oil
1 tsp fresh ginger root , minced
1 tsp minced garlic


Directions
1 Spray a nonstick pan with nonstick cooking spray and cook chicken until just done in the center, about 4 minutes. Remove and place in a large serving bowl.
2 Boil water and cook asparagus for 1 minute. Add in the snow peas and cook another 45 seconds.
3 Drain, rinse under cold water, and drain again. Add asparagus and snow peas to bowl with chicken.
4 Add the corn, sprouts, oranges, peppers, water chestnuts, and green onion to the bowl and mix well.
5 Whisk together the remaining ingredients in a small bowl and pour over salad and toss well to coat.
Additional Information
Chicken can be replaced with pork, shrimp, or steak. Homemade dressing can be made several days ahead of time.
