Servings
Ingredients
2 tbsp olive oil
1 tsp ground cumin
2 tbsp fresh cilantro , chopped
1 medium limes , juiced
1 pinch salt and pepper (to taste)
2 boneless skinless chicken breasts , cut into 1 inch cubes
1 small zucchini , cut into 1/2-inch slices
1 medium onions , cut into wedges and separated
1 large red bell peppers , cut into 1 inch pieces
10 pinch fresh cherry tomatoes , 10 cherry tomatoes


Directions
1 In a shallow dish, mix together olive oil, cumin, chopped cilantro, and lime juice. Season with salt and pepper.
2 Add chicken, and mix well.
3 Cover, and refrigerate for at least one hour.
4 Preheat grill for high heat.
5 Thread chicken, zucchini, onion, red bell pepper, and tomatoes onto skewers.
6 Brush grill with oil, and arrange skewers on hot grate.
7 Cook for approximately 10 minutes, or until chicken is cooked through, turning to cook evenly.
Additional Information
Serve with rice, salsa and warm tortillas.
