Ingredients

1 lb boneless skinless chicken breasts , cleaned and sliced thin or pounded
1 tbsp minced garlic
2 scallions , chopped
2 eggs , lightly beaten
0.5 cup brown rice flour , or chickpea flour
2 tbsp olive oil , or butter
1 cup fresh mushroom slices
0.5 tsp salt
0.5 tsp black pepper
2 tbsp chopped scallions , for garnish
0.5 cup white wine
0.5 tbsp fresh lemon juice
1 cooking spray (gluten free)
1 tsp italian seasoning


Directions

1 Spray a skillet with cooking spray. Saute garlic and scallions for a few minutes.
2 Dip chicken in egg, then flour.
3 Add chicken to pan and brown on both sides. Add butter to the pan, mushrooms, salt, pepper, Italian seasoning, white wine and lemon juice and continue cooking until chicken is cooked through, mushrooms are soft and the sauce thickens.
4 If needed, add a little extra white wine.
5 Garnish with scallions and serve.
