2 fresh plum tomatoes , about 1/2 cup chopped
1 fresh mango , about 1/2 cup chopped
0.25 cup fresh chopped red onion
0.25 cup fresh lime juice
3 tbsp fresh cilantro
2 tsp sliced jalapeno pepper , finely chopped (up to 3 tsp)
12 oz boneless skinless chicken breasts
0.5 cup cold water
0.25 tsp salt
0.12 tsp ground red pepper (cayenne) (up to 1/4 tsp)
8 medium corn tortilla
1.5 cup Lettuce, leaf, shredded
0.25 cup Sour Cream, light
1 pinch fresh cilantro , for garnish (optional)


Directions
1 In a bowl, mix together tomatoes, mango, red onion, 2 tablespoons lime juice, cilantro, and jalapeno pepper. Cover the salsa, and refrigerate for 30 minutes.
2 Rinse chicken and pat dry with paper towels.
3 In a large heavy skillet, bring to a boil the chicken and water.
4 Cover, reduce heat, and simmer until chicken is very tender (12 to 14 minutes).
5 Preheat oven to 350 degrees.
6 Drain chicken well and cool until easy to handle.
7 Shred the chicken using two forks.
8 Mix shredded chicken with the remaining lime juice, salt, and ground red pepper.
9 Heat foil wrapped tortillas in preheated oven for 10 minutes.
10 Spoon the shredded chicken down the center of warm tortillas.
11 Top each with salsa, lettuce, and sour cream.
12 Roll the tortillas up. Serve with remaining mango salsa and fresh cilantro.
Additional Information
When seeding and chopping jalapeno peppers, be sure to wear gloves. Do not touch your face with the gloves while working with the peppers. You may also omit the jalapeno pepper if you don't like spicy foods.
