4 boneless skinless chicken breasts , halves (4 ounces each)
4 tbsp fresh lime juice , divided
1 pinch black pepper
0.5 cup fresh cilantro , chopped
0.33 cup fresh chopped green onion , thinly sliced or minced
0.25 whole jalapeno pepper , seeded and minced (up to 1/2 to taste)
10 pine nuts , toasted (2 tbsp, optional)


Directions
1 Coat a broiling pan or baking sheet with nonstick cooking spray.
2 Brush 2 tablespoons lime juice over chicken.
3 Place coated chicken in prepared pan and generously sprinkle with pepper then set aside.
4 In a small bowl combine remaining 2 tablespoons lime juice with cilantro, onions, jalapeño pepper and pine nuts if desired, stir to combine and set aside.
5 Place chicken 1 to 2 inches from heat and broil for 8 to 10 minutes or until the center of chicken is no longer pink.
6 Once chicken is cooked, serve with cilantro salsa and garnish with lime slices if desired.
