Ingredients
18.25 oz caramel cake mix (such as Duncan Hines)
4 oz whipped fat-free topping , thawed
12 cup chopped apples , peeled and diced (Golden Delicious)
1 eggs , lightly beaten


Directions
1 Preheat oven to 350 degrees F.
2 In a large bowl, mix the cake mix, whipped topping, apple, and egg, beat with an electric mixer at medium speed until just moistened. Chill for 30 minutes.
3 Spray nonstick cooking spray onto a baking sheet, drop level tablespoons of batter onto baking sheet, and bake until tops of cookies spring back when touched, about 16 minutes. Do not overbake.
4 Remove from pan and let cool completely.
Additional Information
Alternate version is to make them crispy instead of chewy: shape dough into small balls, roll in 1/3 cup low fat cinnamon graham cracker crumbs, bake for 16 minutes and cool.
