Ingredients
1 olive oil cooking spray
0.25 cup brown sugar
0.25 cup honey
0.5 cup margarine
2 eggs
0.5 tsp baking soda
0.5 tbsp vanilla extract
1 cup Flour, all purpose, unbleached, enriched
2 cup Oats, rolled, old fashioned
1 cup Cherries, fresh , pitted and roughly chopped (20 cherries)
0.5 cup chopped walnuts
2 cup bran flakes cereal , crushed (or oat flakes)


Directions
1 Preheat oven to 350 degrees. Lightly spray two baking trays with olive oil spray.
2 Beat the sugar, honey, margarine, eggs, baking soda, and vanilla extract in a large mixing bowl on medium speed for 2 minutes.
3 Fold in the oats, flour, cherries, walnuts, and crushed bran flakes, mix thoroughly.
4 Drop spoonfuls of the mixture onto the prepared baking trays, spacing them about 2 inches apart. Bake for about 15 minutes, or until light brown.
5 Before placing them on a wire rack to cool, make sure to let them cool for approximately 5 minutes before removing from the baking tray.
Additional Information
Instead of cherries, you can also try other fresh fruits in this recipe as well!
