Ingredients
16 oz Cream Cheese, light, serving , softened at room temperature
0.67 cup sugar
2 eggs , at room temperature
1 tsp vanilla extract
24 Cookies, chocolate wafer
21 oz Pie Filling, cherry, low calorie


Directions
1 Preheat oven to 350 F. Line muffin tins with paper and foil cupcake liners.
2 Beat cream cheese and sugar until creamy. Add eggs and vanilla extract and beat until smooth.
3 Place a chocolate wafer in each muffin liner; top with a dollop of cheese mixture. Bake 18 to 20 minutes; remove from tins and let cool. Top with cherry pie filling. Chill overnight in a covered container before serving.
Additional Information
A 9 x 13-inch cake pan with lid works great to store the cheesecakes in.
