Ingredients

0.5 cup butter , melted
0.33 cup sugar
0.75 cup graham cracker crumbs (gluten free)
0.5 cup chopped walnuts
0.25 cup sugar
1 eggs
1 tbsp fresh lemon juice
8 oz cream cheese
0.5 tsp fresh lemon peel , grated
0.5 cup low carb baking mix (see Gluten-Free recipe below)

Gluten-Free Baking Flour Blend
1.5 cup Flour, sorghum, sweet white, whole, stone ground
1.5 cup potato starch (or corn starch)
1.5 cup Flour, tapioca, stone ground
0.5 cup chickpea flour


Directions

1 Preheat oven to 350°F.
2 Stir together first 4 ingredients (except the graham cracker crumbs). Add melted butter and combine.
3 Press into a 9x9" square non-stick baking pan.
4 Bake in a 250°F oven for 12 minutes.
5 Cream together cream cheese and 1/3 cup sugar.
6 Add egg, lemon juice, lemon peel, and mix well.
7 Pour over baked layer, sprinkle with remaining graham cracker crumbs and bake for an additional 20-25 minutes.
8 Cool and cut into bars.
