Ingredients
1 cooking spray
1 tbsp bread crumbs
2 cup fat free cottage cheese
1.5 cup fat free shredded cheddar cheese
2 eggs
6 tbsp whole wheat flour
10 oz Spinach, chopped, frozen , thawed, well drained
0.25 cup fresh chopped green onion
1 tbsp pimentos (or roasted red bell pepper)
1 tbsp chopped parsley
0.25 tsp ground cayenne (red pepper)
0.25 tsp black pepper
0.12 tsp ground nutmeg


Directions
1 Preheat oven to 350 degrees F. Spray a 13x9 inch pan with cooking spray. Coat bottom and sides of pan evenly with bread crumbs (use an additional tablespoon of crumbs, if necessary).
2 Mix together eggs and cheeses in a bowl, then stir in remaining ingredients until well blended.
3 Pour ingredients into pan and bake until lightly browned, about 40 minutes.
4 Before cutting into squares, let cool about 10 minutes.
