Ingredients
1.5 cup Cottage Cheese, 1% fat , drained
0.25 cup shredded carrots
0.25 cup fresh chopped celery (or green sweet pepper)
0.5 tsp fresh chives , finely snipped
0.25 cup lowfat plain yogurt
8 piece Bread, whole grain, slice
2 tbsp Mustard, horseradish
2 oz fresh spinach leaves (or lettuce leaves)
1 small tomato , cut into 4 slices


Directions
1 Combine the cottage cheese, carrot, celery or green pepper, and chives in a medium bowl. Stir in the yogurt.
2 Evenly spread the horseradish over the whole grain bread. Place the spinach leaves over four of the bread slices. Place the cottage cheese mixture over the spinach and place 1 tomato slice on top. Cover with the remaining bread slices.
Additional Information
Cut each sandwich in fours and serve as an appetizer.
