1 Heat a cooking spray coated frying pan over medium heat. 2 Toast pumpkin seeds over medium heat 3 to 5 minutes or until the begin to pop. Set aside. 3 Heat a cooking spray coated frying pan over medium heat and cook onion and garlic 3 to 5 minutes. 4 Mix in squash and cook 20 minutes, stir often while cooking. Sprinkle with salt and pepper. 5 Pour squash into a serving bowl and top with pumpkin seeds.

Be sure to keep an eye on the pumpkin seeds, they will begin to pop when they are finished.
