Servings
Ingredients
1 lb mahi mahi fillets , washed and cut into small cubes (or any firm-fleshed, fresh fish)
0.5 cup fresh lime juice
1 medium garlic cloves , crushed
0.25 tsp hot pepper sauce (up to 1/2 tsp)
1 pinch salt
1 pinch black pepper , coarsley ground
1 large onion , finely chopped
1 cup red bell peppers, sliced , cut into strips (1 red pepper)
1 medium celery stalks , finely chopped
0.5 cup fresh cilantro , chopped


Directions
1 In a large glass bowl, place the fish and add the lime juice, garlic, and hot pepper sauce.
2 Sprinkle with salt and black pepper. Cover and refrigerate for 1 hour.
3 Add the onion, bell pepper, celery, and cilantro. Cover and refrigerate for 1 hour longer.
4 Serve chilled in martini glasses for an elegant look.
Additional Information
Ceviche, seviche and cebiche are all names for the Peruvian/Ecuadorian method of cooking fish in the acid of fruit.
