2 lb Celery Root, fresh , peeled, cubed
1 potatoes, fresh, medium , peeled, cubed
0.5 cup Onion, vidalia, fresh, chopped
2 tbsp butter
0.5 cup half & half , heated
1 pinch ground nutmeg
1 pinch salt , to taste (optional)
1 pinch white pepper
1 pinch chopped parsley , finely


Directions
1 Boil a pot of water. Cook celery root, potato, and onion 15 minutes or until soft. Strain well.
2 Using a food processor or blender, puree vegetables until smooth.
3 Pour mixture into a frying pan. Cook mixture over medium to medium low heat 15 minutes, stirring often, be sure not to brown mixture.
4 Add margarine and half and half into mixture until very creamy.
5 Mix in nutmeg, salt, and pepper. Top with parsley when ready to serve.
